I think they did it through purling the letters and knitting the rest, as purling will indent out. As a background thing, ‘knitting’ is basically two main stitches, knitting and purling, knitting makes the nice V pattern, and purling is the squiggly pattern that you see. Purling is the reverse of knitting, b/c if you were to see the other side, it would appear that ‘gay’ is outlined by purls and colored in by knits.
